Like you, my girlfriend is vegan. I am personally low-carb. I am constantly stunned at how much we eat the same. Avocado on low carb vegan tortillas. Nuts. Berries. Hummus. Lots of vegetables and olive oil. The biggest difference is I eat eggs, cheese, and small amounts of meat. While she must balance protein combinations and fats. We both shun sweets and bad carbs.
No point to this other than on one hand, we seem to be at dietary extremes. Yet we have some 70% of our foods in common. I don't think many people would believe that. I know I wouldn't if it weren't a personal experience.
