I have successfully been on low-carb for maybe 5 years? This was in response to a doctor’s comment that I was a year away from needles in my stomach, high cholesterol, two eating disorders, and being very fat. My biggest rule is eggs and olive oil for breakfast every morning. A liter of olive oil doesn’t last me two weeks. I drink it even. And I buy the good stuff.

Today my cholesterol is too low (141) and my cardiologist just ran a comprehensive bloodwork on me…he walked in, waved the bloodwork in the air and proclaimed, “How old are you? 70? You take what drugs? (Lisinopril is all.) There isn’t one damn thing out of place. Not one damn thing. You stay on that low carb diet and you’ll live forever…”

THIS WAS A CARDIOLOGIST!!!

My only advice is to watch the processed meats. They are easy, I know. But sometimes a baking sheet loaded with low-carb veggies, broccoli, cauliflower, onions, peppers…that makes a great dinner. I just roast them for 20 minutes.
