I eat reasonably low-carb, but add a half-liter of olive oil a week, usually with eggs at breakfast. I do not restrict most fats otherwise. The thing is, your body needs fructose to make cholesterol. In its absence, your cholesterol gets too low. So I add an apple a week and it keeps my cholesterol within a healthy range at least. Last check was a total 143 with good ratios. Yes, it could be up 20 points, but better than my way-too-high cholesterol 20 years ago.
