I eat pretty much what you could call a low-carb Mediterranean diet. Lots of Greek salads. Small amounts of hummus, guacamole and cheese on crisped low-carb wheat tortillas. Eggs and olive oil every morning for breakfast. (And about a liter of olive oil a week.) I went from talk of needles in my stomach to blood glucose around 80 all the time. From cholesterol in the 260+ range to 140-160. The change has been remarkable. Keep preaching!!!
