I eat low carb Mediterranean. No rice, limited hummus, lots of horiatiki salads and inspired dips for low-carb tortillas crisped in the microware. (Coat with olive oil and cook for maybe three minutes.) So many goodies that are seriously healthful. I DO need to eat a steak maybe weekly. It goes great with tabbouleh, btw. LOTS of olive oil.
