I eat low-carb, and usually a liter of olive oil a week. I am stunned at how perfect my bloodwork and health both stay. My choices and variety depend on what I want, not what I think I need? Occasionally, I'll crave curry (on cauliflower). But I eat pretty much a dozen standard things.
I should say that my blood glucose stays between 85-95 for 24/7, but my cholesterol is too low. Fasting total at 140. When I asked my cardiologist about it he told me to shut-up! Seriously, true story.
