First of all, what you have written is a great documentation of the issues involved. Very well done. I don't mean this to be in any way critical of your fine analysis.

Cholesterol is made in our bodies with saturated fats. But we NEED saturated fats. It also takes fructose, which we DON'T need. As in high fructose corn syrup, half of table sugar (sucrose), and in smaller doses in fruits. Follow this highlight and you can eat coconut oil when it suits you. Personally, I prefer butter. I think it tastes better.

(As context, I eat a liter of olive oil in a good week, so consider the source. But my fasting cholesterol is in the 140s. Normally it is 150-160.)
